It is time for me to start cooking a little closer to my roots: Andra Pradesh, India. Tomato Dal is a south Indian comfort food much like the American macaroni and cheese.
Ingredients:
- 5 Roma Tomatoes diced
- 1/2 cup Toor Dal (Hindi) AKA Kandi pappu
- Seasoning AKA popu
- 1 tsp Urad daal
- 1/4 tsp Cumin
- 1/4 Mustard seads
- Pinch of ingua AKA Asafoetida
- 1 Dried Red chili
- A few Curry leaves
- 1/2 tsp Rasam powder
- 1 Green chili
- As needed Olive Oil
Procedure
- Cook daal in a pressure cooker
- Heat oil on a large pan till heated
- Add the popu, green chili and allow to cook
- Add diced tomatoes, rasam powder and salt
- Cover the pan and allow the tomatoes to cook
- Add the daal and mix
- Taste and add salt as needed
